Fry sausage (I recommend adding some ground fennel into your sausage meat, if its not in there already)until nicely browned and then set aside.
Put some peas on to boil. Meanwhile fry chopped spring Onion in the rendered sausage fat. Once Onion is softened drain the peas and add them to the pan, with a little water and continue frying for a couple of minutes.
Season with salt and pepper and then blitz Into a sauce with a blender.
Return sauce to pan and add just shy of Al dente pasta, and some pasta water, tossing to emulsify as the pasta finishes cooking. Once ready toss through some fresh Basil and a good glug of extra virgin olive oil.
Serve Topped with Straciatella.
