we don’t have prepacked meats here in jordan so i had to ask the local butcher to prepare me some but they do not understand what 97/3 is. (1.4 lbs $10.7 JOD)

    What were you looking to do with 97/3 beef?( Just pure curiosity)

    Since there is a little bit going on here and you said you need to watch your fat you might want to invest in a fat analyzer. They are a bit pricey but if you really need to watch it, it might be worth it. You can absolutely do home testing too by weighing out a bit of the meat, rendering it as much as possible, cooling and weighing the fat but it won’t be as accurate as an actual analyzer.

    No one can tell you from a picture, and it’s impossible to make a remotely educated guess without seeing the meat that was ground. Where I work, we are required to test every batch of ground beef for fat content using a lab-grade analyzer that costs as much as a used car, and after 13 years I can tell you that sight alone is wildly unreliable.
