I actually uploaded this the day of (May 25th), but I deleted it since I realized I hadn’t cut into it yet and wanted to post the inside as well 😅

I always make the icing from scratch (ermine, in this case), and more times than not the cake part too, but where I live is impossible to get the good ol’ American box mixes without paying an arm and a leg; so my past few cakes have been the box stuff that my mother was so kind to bring me during her last visit here.

    Celebrate surviving 6 months of being a parent! Order in dinner, eat cake, go for a walk and try to get some sleep!
    I’ve make Ermine Frosting from my Grandma’s recipe. It can be tricky to make but it is so good. My grandma always put it on Red Velvet Cake …. Now I have to check to see if I have all the ingredients for red velvet cake with ermine frosting. It would be great for US Father’s Day cake right?

  7. I did the same for my kids lol! Surely he can lick the icing and mess around with the cakey bits? It’s funny when they get a taste of something they like and try to all hell to get it into their mouths but the motor skills aren’t there yet so there’s more like crumbs everywhere and very little in the mouth. Ahh sweet memories ᵕ̈

    ETA just saw that this was weeks ago 🤦🏼‍♀️

    Lol I thought you said 6 years as well but holy crap mama you did this with a 6 month old in the house? That’s some skill! It’s such a cute cake and I’m sure it’s delicious, I love confetti cake, I still prefer the box mix at 30 my brother and I are both in our 30s and boxed confetti cake is still our cake of choice for birthdays lol

    Every year I ask my mom/fiance/grandma/whoever is willing to make me a birthday cake- I want a white or funfetti cake with fluffy light blue icing and sprinkles.
    I have never once received the cake I ask for. Yet somehow, you have made the imaginary cake of my dreams a real thing😂

    My husband and I decided we’re going to do a small cake for our son when he turns 6 months, but cut in half for his “half birthday” to just destroy and the other half is for us who will have survived 6 months of our first child lol
