This is the 4th time this week I've been cooking this pork, my original goal was medium well from the very start, then a little rarity, but it seems pretty tough. Anyways, this one was reversed seared at 300° (my oven will not go any lower) for 25 min and pan seared on high for 3. All in all, I consider this a success because it is juicier then my first 2 attempts and easier to eat than my 3rd attempt. Hopefully next time I can lables right and actually buy beef steak.
