I come across this type of bar fare on social media all the time. They seem like typical bar food at some izakayas. Has anyone tried these types of dishes? What kind of meat are they and how are they prepared? Are they served rare or raw? Thanks in advance!

Offal mostly.
It’s pork (?) [offal](https://en.wikipedia.org/wiki/Offal), called horumon in Japanese. Only pig and chicken liver is served rare, everything else will be cooked. Beef liver is no longer allowed to be sold rare.
Not enough of an expert to name them all based on look, but it is declines.
Probably, motsuyaki.Izakaya that mainly serves yakitori-like grilled pork guts on skewers.
