    Spaghetti Carbonara

    Toss 140g of cooked spaghetti in crisped pancetta (approx 50 g) and it’s rendered fat. Stir in (off the heat) mixture of 1 whole egg, 2 yolks and 1 cup of grated pecorino. Add pasta water for consistency and pepper to taste.
