Hi all! I have a currant bush in my yard, and it's strawberry season so I couldn't resist. I want to combine them, but don't know which sources to trust online. The NCHFP says 15 mins water bath for hot packed currants, but I'm not seeing what to do when combining fruits. I found this recipe that looks like it fits the bill, do you know if it's safe?

    I think it stands to reason that if you have two fruits, with no other adulterations than sugar, lemon juice, and added pectin, that whichever fruit has the higher water bath time is the one to use.

    One of the strawberry jam recipes I used a few weeks ago warned that you should use medium high heat with constant stirring for cooking down the strawberries. The reason being the longer they stay hot the more of the aromatics that make strawberries taste and smell like strawberries will evaporate.

    So if you’re going to have to water bath them longer because of mixed berries, I would expect that advice is even more critical to the outcome.

    (I burned the bottom of my first batch so the “constant stirring” is appropriate advice).
