Judging by the crust, the rendered fat and the edge to edge pink, this was probably slow cooked in some way. Temp could be 60 C maybe a little north. Regardless though I would consume this bad boy without questions asked.

A bit past where I would usually cook it, but the sear looks good and IMO tri-tip specifically can benefit from being closer to medium than medium rare. Would definitely eat!!

It looks eerily similar to a sous vide pork tenderloin with a nice rub, so I’m gonna guess it’s about 155-160 internal and perfectly safe to eat. Kind’ve a red herring for this sub to attack
