This work week’s meal prep includes a tumeric quinoa salmon and shrimp bowl with homemade taziki, and a chicken apple salad sammie.
The marinade for the shrimp and salmon is easy peasy….. half a cup of EVOO, half a big fat lemon, a handful of fresh dill and fresh oregano, a clove of garlic, a tsp of honey, and some sea salt and pepper. So good!
I did the quinoa in the instant pot. 1:1.5 quinoa to water ratio and added a little turmeric for love and flavor and color. 1 minute manual pressure and ten minute natural release and it is PERFECT. I’ll never cook it another way again. Then I just mixed the fish, chickpeas, and allllllll the veggies.
The chicken salad is a cup of fat free Greek yogurt (full fat might be better but I’m counting calories atm), 12oz chicken, one diced apple, 1/4 cup diced onion, and a handful of dill, a dash of garlic powder and some sea salt. I’ll throw it on some Dave’s thin sliced bread.

    Looks good! Now I’m craving chicken salad. I’ve subbed half the mayo for Greek yogurt but haven’t worked up the courage to replace it entirely yet. Maybe this is my sign
