Sorry the images don’t have captions, but here is a description of the dishes!
Picture 1: The canapés (?) The brown fried ball was a cheese donut with some type of cured ham, the tarts were a caramelised onion tart and the tacos were a prawn taco. My favourite was the cheese donut, not too overpowering and not too greasy!
Picture 2: One half of the amuse-bouche, the porcini tea/egg custard. It was much more umami than I expected!
Picture 3: The other half of the amuse bouche, the porcini toast. The toast was amazing and the mushrooms were perfect.
Picture 4: The uni toast. I’m not a big fan of uni (I personally think it’s best enjoyed in small quantities) but I still thoroughly enjoyed the toast!
Picture 5: The caviar, cauliflower cream and more uni. I’ve had around 3 variations of this dish and I have enjoyed it every time!
Picture 6: Normandy Brown Crab and Green Apples. This course actually replaced another course for me (I am unable to eat raw fish/meats) and I enjoyed it! The crab and the apple jelly meshed together quite well!
Picture 7: The Rosemary Smoked Egg presentation!
Picture 8: The Rosemary smoked egg, served with a foam of cheese (I don’t remember which kind) and smoked chorizo. I absolutely loved this dish, it was perfect and it got me into runny egg yolks!
Picture 9: Langoustine with yellow wine (a supplementary course) The yellow wine tasted stronger than tha langoustine a bit for me, but I enjoyed it nonetheless!
Picture 10: Abalone and Foie Gras! It was served with an amazing, peppery broth (not shown) that’s really stuck with me. The abalone was also perfectly soft, not chewy and tasted better than most I’ve had!
Picture 11: Blue lobster tail, Endive, Dashi beurre blanc (?) I’m sure I loved this dish, but I think it’s slightly unmemorable when compared to the other dishes on the menu.
Picture 12: The pigeon presentation!
Picture 13: The kampot pepper crusted pigeon with a confit leg. This was arguably my favorite dish of the whole meal. The leg was perfectly cooked (a message from chef was wrapped around the leg), the breast meat was tender and the pepper complimented it perfectly!
Picture 14: A shiso and min sorbet pre-dessert.
Picture 15: The main dessert. I think it was a sake and/or coconut desert, but I don’t remember much else!
Overall one of the best lunches I’ve had! The staff were super friendly and answered all my questions, and they managed to make the meal faster than usual since I was leaving Singapore at 5:00PM that day!
