My dad canned and gave me what I think are raspberry preserves/jelly/jam. The white stuff is pretty much only on the surface, and the space between the fruit and the top is the amount of headspace he left (i.e. I haven't taken any out). The inside of the lid is clean (nothing on it but some syrup from transport) and it was sealed. Smells like raspberries with no off odors.

I'd hate to have to throw it out; he gave me a batch at Christmas that was definitely molded (black/greenish spots all through it). So, I've been looking forward to trying it since then.

    If he gave you a batch at Christmas that became moldy, it could be that he’s not using the right recipe or technique to safely can jam.

    Can you share more info on how he canned them?

    Edit to add : Didn’t look at the 2nd pic, it is too much head space for jam, which is a big red flag for safety. I wouldn’t eat it, sorry.
