Filling:
– 4 cups cubed white peaches
– 4 cups cubed green apples
– 2 cups chopped pecans
– 4 tbsp brown sugar
– 2 tbsp honey bourbon
Crust:
– 1 cup sugar
– 1 cup flour (I use whole wheat pastry flour, all purpose is just fine too)
– 1 tsp baking powder
– 10 tbsp salted butter, melted
– 2 tbsp honey bourbon
– 2 tsp vanilla paste
– cinnamon for sprinkling
Instructions:
1. Heat oven to 350°F.
2. Butter or spray with cooking spray a 9×13 pan
3. Spread peaches, apples, and pecans evenly in the bottom of the pan. Sprinkle with brown sugar and drizzle evenly with the bourbon. No need to stir.
4. Make the curst. In a bowl, mix sugar, flour and baking powder. Add melted butter, bourbon and vanilla. Mix until moistened. The batter will be the texture of dense cookie dough.
5. Crumble the batter over the filling in the pan. Sprinkle with cinnamon.
6. Bake for 35-45 minutes, or until the filling is bubbly and crust is crisp and golden.
