I always take a certain pride in splitting the sanma cleanly in half by holding the head and running a chopstick between the flesh and backbone, and then consume everything.

    Wish I knew how to get from step 2 to step 3. I was served something like this at a work party one time at an izakaya and made a total mess of it. Felt like I was at the end of a practical joke (I know I wasn’t, but the difficulty of making this edible is not to be taken lightly).
