I’m trying to make my own burger at home today that tasted similar to one I had at a bar the other day and can’t figure out what kind of burger buns they’re using. It seemed to be a little sturdier than buns used in fast food restaurants and so so good.

This looks amazing. Thick burgers will always be nostalgic for me, because that’s how my folks made them. They also seasoned the hell out of some hamburger, so hopefully this was seasoned well throughout, and not just salt and pepper on the outside.
The fries also look damn good.

Most definitely some sort of sourdough bun, looks homemade or made in a smaller bakery. It’s definitely no brioche. But judging from the crumb it’s a bun made with only flour, water, a little bit of fat and sugar, I’m not sure about eggs, I’d say it’s a German style Brötchen, because that’s something that I’d get at my local bakery in Germany. Professional baker here in a small craft bakery, looks like a standard white bread roll we would make.

We use 50/50 Strong white & Italian Tipo flour at around 70% hydration. A little olive oil, salt and yeast. That’s all.
The colour on top is a little darker than ours I think, maybe they used a little rye in there 🤔.

Almost looks like a German Semmel roll or as called in my part of Wisconsin, a hard roll. Crunchy outs very soft inside.
Got the mustard I use too. Goes great with sauerkraut on brats.
