First attempt at a Mediterranean diet summer charcuterie board because it’s too hot to turn on the oven
Sliced peaches, blueberries, raspberries, roasted red peppers, carrots, red pepper hummus, a few slices of mozzarella, and a whole grain spinach “pie” with feta and pine nuts.

Ingredients:
– 1 cup sliced fresh peaches – 1/2 cup fresh blueberries – 1/2 cup fresh raspberries – 1 cup sliced carrots – 1/2 cup jarred roasted red peppers – 2 tablespoons of store bought red pepper hummus – 3 slices of fresh mozzarella – 1/4 of a homemade whole grain (ETA: gluten free, since ya girl has celiac) bread braid filled with spinach, brined feta, and pine nuts

I lean heavily on the pick n mix style set up doing mediterranean. It takes a lot of the stress & planning out of feeding yourself three times a day lol.

Tinned mackerel in olive oil with a squeeze of lemon and/or chili flakes is also really good on a “cold plate”.
Serve with whole grain bread or crackers.

Yum! That looks amazing! Im a really sensitive non Celiac gluten sensitivity person who grew up in part on a Mediterranean style diet. Its so hard to adapt my old favorites!
I am going to use this for inspiration, its been so hot this summer cooking is a chore!
