I’m peculiar about the colour of my crust and the method of searing.

Eg: a cast iron sear gives it more of a “fried” flat surface.

This crust has some char (which I love) I want to replicate it every time.

My guess it’s a combination of rub, and charcoal, and reverse sear or regular sear.

Any suggestions?

    Looks to me like a hard sear over some serious coals. You can see where some flame was licking the sides

  2. That’s definitely cooked over either a wood fire or charcoal. I suspect there’s a rub on it with some paprika in it, to get that red coloration.

    I’ll echo this is likely done over fire. Could be charcoal of either kind, wood, or a mix. The red coloration looks like smoke to me and some of the spices may have have been charred a bit.

    It’s a nice looking charred crust but I will comment that a good crust is only as good as what the inside looks like too. I mean anyone can sear the crap out of a steak and make it look phenomenal on the outside but keeping the inside a consistent color and doneness with a good crust is the skill

    That’s the kiss of the dragon right there. Flame on a very seasoned crust 100%. My guess open fire on a grill or a blow torch with hella seasoning on the steak itself.

    It’s one of two things. 1) Smoked then seared over an hot open flame. It could be gas, wood, or coals.
    2) cooked over a wood open flamed.

    The red is accomplished by smoking or I can show up when using wood as fuel for a grill. Mostly likely 1 since barely anyone does 2. It’s easier than 2 but 2 is the better cook method.

    There’s some serious caramelization going on with that steak. Could be some sort of sugary rub or it was heavily basted afterwards. Pretty sure no pan or cast iron was used, and not even sure if it was truly grilled, since the 2 or 3 grill marks are only but a few and only on one side of the steak. Me thinks the grill marks were added later for the final photo shoot. No money shot of the internals, so this is probably food photography, especially with a blurred background.

    Other than all that, it looks great! But probably still raw inside. lol
