I happen to be a reverse seer guy. I would have pulled it off sooner during the off direct heat cooking and then done a longer seer on the direct heat. You would pretty much end up with the same internal results but a little bit more crust on the outside. But this looks great and if you invited me over I wouldn’t be late!
