This is the results off the Weber Q1200. I can get some decent grill marks but can’t seem to get a good crust. I cooked it on the highest heat.

Going to be honest. That looks terrible.

Try this:
1. Prior to cooking, dry the steak really well. 2. Add a liberal amount of kosher salt on both sides and put it on cookie cooling rack (if you have one) and put a sheet pan under it. 3. Put pack in the fridge for a couple hours. 4. Pull the steak 1 hour before you intend to put it on the grill. 5. Dry the steak really well again. Add some fresh ground pepper. The key is to get the steak as dry as possible. 6. Grill 7. Let it rest. 8. Enjoy!
An alternative would be to sear the steak on all sides prior to putting it on the grill so you hold the juices in.

So what’s happening is the grill is flat out not hot enough. You’re having to leave it on a while to get a crust to form. In the meantime you are cooking the steak. By the time you have a sear, it’s overcooked and voila. You have what you’ve shown.

That’s not a very thick steak, so it’s going to cook very quickly. You’re better off ignoring the grill marks entirely.
Do 1 minute per side and then flip every thirty seconds to a fresh hot spot on the grill- the grill is warmer wherever the steak wasn’t, so you don’t want to keep just using the same spot.
Rotate the steak like 25° every time you flip so you can keep browning all of the surface.

it looks like the grill wasn’t hot enough, but you said it was on the highest setting… did you let it preheat? have you checked if the regulator needs to be reset?

Marinade your meat with grill oil and other spices and you’ll get a nice and dark steak

My Q1200 gets very hot on the highest setting. Make sure all the little holes in the burner tube are clean and you have blue flame coming out.
