    you can save yourself a little money when you restock on bags.. there are excellent food grade vacuum bag rolls on ebay for way less money than brand name.. great choice on the manual vacuum

    You need to get the 12 quart with sous vide hinged lid. That 8 quart is good to brine a single chicken but not SV cooking. Needs room for water circulation or meat temp will vary allot. A big stock pot will work as long as it’s not overcrowded.

    Nice OP! But if you’re gonna true reverse sear a steak, use your oven + thermometer and not a sous vide Anova/circulator. Took me 8 years to come to grips with that.
