I’ve been loving this greekish salad dip lately so let’s make it together I’m calling it greekish because it’s inspired by two of my favorite Greek salads both of which I can barely pronounce so you’ll have to forgive me for not name dropping here start by chopping some cucumbers and tomatoes as big or small as you like and salting them then prep the scallions pickled peppers and red onions before mashing up some salty cheese with yogurt and a splash of the pickled pepper brine feta is the obvious choice here but I also like a soft salty Bulgarian or Turkish white cheese I used a food processor but honestly a bowl and pork is just as good for this if not even easier and better once the dip is mashed mix in the pickles scallions and black pepper then we need to sizzle up grated garlic dried oregano and mint and the scallion whites and some olive oil this is what makes the dip so so good now we can plate up the dip and veg drizzle it with all of that delicious oil and top with scallion and a bit of fresh basil or Dill eat with your favorite bread for dipping
