We have a prolific amount of cucumbers coming in right now after never being successful before. We have probably 10 of these of this size. I'm thinking of peeling (because they're a little prickly), slicing, and pickling them (trying out canning for the first time). Good idea? Waste of my time? Help!

    My honest opinion is that it would be a waste of your time. I think these would get really mushy if you heat them up.

    Try some refrigerator pickles, maybe?

  3. If you are in a hurry to use them, I suggest making fridge pickles. You can slice them thin and make ice cream pail pickles which are sweet or into spears to make dills. This is a good way to repurpose commercial jars. The prickles should just come off with a wipe of a washcloth, no need to peel them.

    If you want to try canning, you will need to do a bit of research. Proper equipment, lids, jars…and also find a tested/safe recipe. Check out the resource links in the right hand side of page.
