Experience the traditional flavors of Bali with this Authentic Balinese Lawar recipe. Lawar is a mixed vegetable and meat dish, often made with coconut, green beans, and aromatic spices. This Balinese specialty is typically served as a side dish and is perfect for adding a taste of Bali to your meals.

Recipe:

Ingredients:
200g green beans, finely chopped
200g grated coconut (fresh or desiccated)
300g ground pork or chicken
2 tbsp vegetable oil
4 cloves garlic, minced
6 shallots, finely chopped
3 red chilies, finely sliced (adjust to taste)
2 lemongrass stalks, white part only, finely chopped
4 kaffir lime leaves, finely chopped
1 tsp shrimp paste (optional)
1 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp ground black pepper
Salt to taste
Fresh lime or lemon juice

Instructions:

Prepare the Ingredients:
If using fresh grated coconut, toast it lightly in a dry pan over medium heat until fragrant and slightly golden. Set aside.
Blanch the chopped green beans in boiling water for 2-3 minutes, then drain and set aside.

Cook the Meat:
In a large skillet or wok, heat the vegetable oil over medium heat.
Add the minced garlic, chopped shallots, and sliced red chilies. Stir-fry until fragrant, about 2-3 minutes.
Add the ground pork or chicken and cook until browned and fully cooked, breaking it apart with a spatula.

Add the Aromatics:
Stir in the chopped lemongrass, kaffir lime leaves, and shrimp paste (if using). Cook for another 2-3 minutes until the aromatics are well combined with the meat.

Mix in the Spices:
Add the ground coriander, ground turmeric, and ground black pepper. Stir well to combine.

Combine with Vegetables and Coconut:
Add the blanched green beans and toasted grated coconut to the skillet. Stir-fry for another 3-4 minutes until everything is well mixed and heated through.
Season with salt and a squeeze of fresh lime or lemon juice to taste.

Serve:
Transfer the Lawar to a serving dish and serve warm as a side dish with steamed rice and other Balinese dishes.

Tips:
For a vegetarian version, omit the meat and add more green beans or other vegetables like grated carrots or bean sprouts.
Adjust the level of spiciness by adding more or fewer red chilies.
