Here’s the scoop:
1. The millet was cooked with veggie broth and saffron
2. The steelhead was marinated for about 20 minutes in a blend of preserved lemon, harissa, and olive oil. And cooked in the air fryer for 5 min at 425.
3. The white zucchini was salted ahead of cooking for about 45 minutes to drain some water. And it was sprinkled with a blend of smoked paprika, onion powder, garlic powder, and cayenne. Then sautéed in olive oil.
4. Green beans were sautéed with garlic and chili flakes.
5. Arugula was roughly chopped and treated like an herb.
6. The millet and veggies were dressed with lemon juice, lime juice, lemon zest, yuzu olive oil, with an anchovy mashed in.
7. I finished it all with a bit of cayenne to add a little heat and lemon salt and pepper to taste.

This turned out really delicious. A lot of brightness with the citrus. The green beans added crunch. And a double dose of omega-3.
