Just harvested these bad boys from my garden. A few of them ended up bigger than anticipated.

    Nice! Pick them smaller in the future; the taste will be better, and you’re less likely to get tired of eating them. Only let them get this big if you’re growing them for zucchini bread or similar recipes.

    I discovered a nice soup recipe that uses up 1and a half pounds of zucchini.

    Sauté chopped 1 clove garlic, 1 onion, add zucchini with seeds and skin off, 10minutes simmer until soft, add 1-1/2c water, 2/3 cup stock, salt pepper to taste, blend in two batches. Serve chilled with croutons, option top with some sour cream and parmesan.

    Good way to use up those big ones after having tried 10ways of fried baked grilled shredded
