That Way mainit na iyung oven mo especially Iyung plate ng oven that’s going to make your pizza cook or bake well Okay so We’ll use Uh for 1 kil of flour we make our hydration mga 60% so 60% of 1,000 is 600 no so we use sa 600 na na water 600 gr so zero we use 600 gr of Uh of water there and then lalagyan na sa mixer Yeah that’s good okay we put Uh 3 gr of Uh yeast so again zero po 3 grams of yeast little more there Okay good lan dito All right so we let it mix already and while we’re doing that prepare natin Iyung flour natin we put a kilo of flour Okay so we use 1 kilo of flour and then Later on we put in about mga 30 to 35 grams of Uh of salt we’re try to We just try to Just try to mix our no We try to mix our yeast din 1 kil dami oh 1 kilo one more okay should be good all right so 1 kilo flour taban natin to slowly incorporate your flow doon sa water no yan yan We put in siguro mga about 20% of the 20% of our ah flour lagay n dito let it mix yan normally I use a spatula para iyung mga nasa gilid ng mga na flour no nami-miss siya ng husto there there you go kung wala kayong mixer It’s okay you can use your hands make sure lang na Talagang tunaw na yyung ano yung flour natin there ganda ng panahon sana ganito lang sana hindi tumulo yung ulan good na incorporate siya ng mabuti slowly add in your flour Yes y Okay then Mi pizza but no there’s a lot of preparation into it lalo na yung mga medyo medyo artisan na mga na mga pizza yolos talagang the prepare the pizza dough 2 days 3 days before no and then Let’s Get ready with 30 to 35 grams of Uh of salt kahit 40 grams kasi yyung flour ni hindi lahat nasasama doon sa sa do na na basa na ng water so try to push the the flour Para mag-mix siya ng mabuti there you go so nahalo na then wel continue incorporating our flower good K ganito ko siya hinahawan ko yung ibang do niya para para mag-mix lang ng husto make sure na ma- ng maayos yung ano yung ibang d niya there kasi p usually pag iniwanan MOA na ganito ikot lang siya ng ikot pero hindi talag nagm masyado the new the new mixers meron silang Rod sa gitna doon umiikot yung yung hook So yung yung masa niya yung dough yun ang umiikot So this basically What we’re doing we’re trying to hold part of the part of the dough para umikot ng husto yung yung mini miix natin I’ll do this for about 8 minutes so while we mixing this wel put in some Don Elena olive oil putting 20 to 25 grams of Uh oil there you go It’s 25 grams of exra virgin olive oil for this one and then slowly b natin siya yan Yeah Okay slowly incorporate our oil there you go like what I said kailangan all Ingredients are measured properly Yeah by doing this mas na i-incorporate na Mabuti yung ingredients ng dough so two more minutes and then ilalagay natin d sa proofing box taggal natin yung dough sa sa hook it rin tanggal natin good tayung proofing box natin wel transfer this into a proofing box the proofing box will have to be oiled on all side para yung hindi siya didikit no d sa sa plastic Okay good so babagsak na natin dito just like that Okay put some olive oil cover na si ng olive oil y good Nice Ganda smooth good oil and then ferment close this now and then we let ferment for about 24 hours So bukas pwedeng gamitin maganda kung bukas gagamitin this d we prepared yesterday no So if you Take a Look at it ito Nagbu na siya So nagf na siya It’s been there for about 18 hours yeah 18 hours now and then y siyang in ang in-need natin babagsak natin dito lahat go nice [Musika] good Nice Ganda ng doon natin oh look Okay good so [Musika] cover it Turn it you go put it here slam it Turn It lang there Turn it and there those [Musika] ready good make it rest for about 20 minutes and then Babalikan natin siya then We’ll cut it Then we can start Preparing a pizza Okay there you go All right so After 20 minutes nr na natin do natin what we do at this point is that we will make them into balls already so our proofing box is here it’s been oiled no and then we we cut our Uh our dough into siguro about less than 300 300 gram about 280 is good good there you go so putting 280 sticky pa siya oh mataas kasi hydration niya e so pag mataas hydration niya ganan talaga sticky yung yung dough natin parang hindi siya dumikit sa sa way scale just oil pal hindi dumikit yung yung sa Wi sc Okay then zer zero and we put in our dough Okay about Yeah 280 is good perfect 280 sakto na yan then turn him to balls an grabe ung [Musika] ration ok [Musika] prepare na natin yung ingredients na for pizza or toppings let me just clean my [Musika] table ngon naman ire na natin yung toppings for toppings it’s best to of course use a mozzarella cheese but again if you don’t have mozzarella cheese at home you can use any cheese quick melt It’s really up to you kung ano yung meron ka Okay so I’ll use this So what We’ll do we Cut the cheese like this and then we cut it into Cubes pwede mong cut into Cubes pwede cut into pahaba It’s really up to you how you want you cheese so pag medyo hindi masyadong mainit yung oven mo Pwede mo siyang i- Cubes pero pag hindi ag talagang mainit you can use na grated yung ano grated yung yung cheese mo put it here yan [Musika] next tomatoes so we using Donya Helena quality peeled tomato y Galing Nice buo yung ano Bubo tomatoes niya one more Okay there you go take this out tomato really big nice lalaki ng tomato nila nice see So what do y hindi ipin masyado kasi para hindi parang meron pa rin tayo no Parang may texture pa rin tayo babal na ganun Ah so still have The texture of Uh tomatoes tanggalin lang natin yung ano tatanggalin lang of this tsan ako T natin yan diyan aan put sauce and then put in some mozzarella But what I want is Okay what I’ll do is I’ll put some anchovies anchovies I’m not putting slivers of anchovies I want ganyan paglagay ko anchovies yun so pag sliver siya masyadong malalaki masyadong maalat so I try to you know cut him to drug again Ian again There then I’ll put in my basil valiant come here Join me what i like about this oven why Because it cooks it properly un like un like the regular oven yeah the oven at home yeah the regular oven get it dry instead more than that the regular oven at home doesn’t reach about 500 to 900 make good pizza I need about 500 to 900 the longer you cook it it becomes crispier but with 900 Wow It’s really fluffy I know right butong Yeah good good Yeah one more
