2 tbsp oil
2 lbs Rockfish (4 or 5 fillets) deboned
4 tbsp flour
1 tsp cornstarch
1 tsp sea salt
.5 tsp pepper
1 or 2 lemon
In a bowl mix the flour starch salt and pepper
Pat the fish dry with paper towel
Cover fish in flour mixture on both side
In a large nonstick pan heat oil at 425 very hot
Add fish about 3 minutes per side so it's seared and cooked through
Garnish with lemon to taste

This meal served 4. We were going to do rice but had berries. If I had a fish spatula I would have used cast iron for a better sear. I had to add oil during the sear.
