I find the best way to check corn is to peel back the cob a little bit while it’s still on the stalk and press my finger nail into one of the kernels. If the liquid that comes out is clear, not ripe yet. If the liquid that comes out is milky, it’s ready.

NOW is the time to protect them. Right now! I picked several perfect ears for dinner one night (it was fabulous) and when I went out to pick and preserve the rest the NEXT DAY, every single ear was eaten right down to the cob. Birds? Squirrels? (Probably.) THIS year, I’m putting up some strong netting when they get close to being ripe.
