I posted here a while ago about my fascination with this dietitian and her amazing Tedtalk on Mediterranean food. Finally I made this risotto like dish from her book. It was healthy, quick to make, and delicious. I feared it was too watery at first so I strayed from the recipe a bit in uncovering the pot and having higher heat to reduce moisture. I did not have freshly shaved parmesan but I did have powdered so that was all I used. I also only had a quarter of an onion and the recipe called for one full onion. I will say the 1/3 cup of olive oil was a bit much as it resulted in a greasiness in the mouth. Though overall I enjoyed it and I’m excited to try more from the book!
