Dry brined with Celtic sea salt, then seasoned with prime truffle seasoning. Smoked for 4hrs on a pellet grill at 180-200F. Then seared over the flames for 2 minutes on each side. Rested for about 20 minutes.

  4. Looks great. I cook whole picanhas like this all the time. I tend to slice it a bit thinner, but looks great nonetheless. One of my favorite things to make on my kettle.

    I always buy the 2 pack at Costco. I slice one up for steaks and keep the other whole for this method.
