I recently had a great meal at Kadeau in Copenhagen and it is probably my favorite 2 star restaurant right now. The restaurant is beautiful and very romantic and we got to sit at the greenhouse table which had great natural light. The service team is friendly and not cold. The cuisine of Kadeau is New Nordic, with a focus on produce from the island of Bornholm, where the founders of the restaurant are from. For this visit, we had the Growing Season Summer 2024 menu and the NA pairing. The Non Alchoholic pairing is good but very expensive at 1,200 kr.

Menu:
1) tomatoes, mints, spruce – 7/10 sun-dried tomatoes had a nice chew and sweetness, the herbs added worked ok with the tomatoes
2) kelp, beach herbs and garden shoots – 8/10 a good salad, lots of textures
3) herring, loke and unripe blackcurrant – 10/10 the rye bread shell had a nice crisp, the loke cheese was creamy and salty the herring gave the dish amazing salinity without being fishy. Very good
4) mahogany clam and sloe blossom – 8/10 There is a sour cream at the bottom which added a rich flavor with a bit of acidity and the kohlrabi was crunchy and sweet. The mahogany clam was kinda overpowered in this dish, having a delicate flavor.
5) peas, fig leaf and oysters – 9/10 The peas and oysters were great, bathed in a sour fig leaf sauce.
6) raw shrimps with summer fruits – 7/10 The raw shrimps were great flavor wise but had a slimy mouth fell, combined with the dried fruits chewiness, the dish was very monotone in texture and the flavors clashed.
7) hot and cold smoked salmon – 10/10 This is the best salmon I’ve ever had. The dish is presented and plated in front of you by a chef. The salmon is smoked twice, had a very mellow smoke flavor and was melt-in-your-mouth. The salmon came with a sauce made with lavender butter which was amazingly umami and had prominent lavender flavor. Absolutely incredible.
8) The salmon skin/crust from the smoked salmon was served after the main salmon dish with some pickled veggies – 7/10 It is part of the salmon dish so it’s not on the menu. Extremely smokey but I can’t remember what the pickles were. Sorry about that
9) crab and elderflower cracker – 9/10 The cracker was crispy and had a cheesy flavor, the crab and cauliflower that was grated on were sweet, and the elderflower was noticeable. Great dish
10) white asparagus, caviar and seaweeds – 8/10 The asparagus and caviar I was a fan of, the seaweed did not add much to this besides texture.
11) squid, new potatoes and rosehip – 8.5/10 This was the most interesting dish served on the menu, the potatoes were fragrant, the squid was super chewy, and the rosehip was quite floral. Tasty but it depends if you like squid.
12) lobster and grilled heads – 9.5/10 The lobster was cooked perfectly and the sauce is basically an intense lobster bisque with more acidity.
13) pressed pork and celeriac – 9/10 Layers of pork, celeriac and greens, paired with a buttery sauce. For the main meat course, this was very interesting and tasty.
14) cherry leaf ice cream – 9/10 A very fancy ice cream sandwich, the ice cream was milky, had a sweet berry tang from cherries I believe and a crunchy element, the cherry leaf worked well with the ice cream.
15) rhubarb, beetroot, plums 8/10 Their take on fruit cake, the texture was gummy and unimpressive , but the taste was wildly reminiscent of fruit cake, with many fruit flavors.
16) walnut tart – 9.5/10 The tart was nutty, sweet and quite moist. The side of crème fraîche helped balanced the tart very well. The best tart I’ve had in awhile.

I went to Kadeau last year. The smoked salmon dish is so good. I don’t think that the menu I had worked for me personally and I ended up with an upset stomach from the food, but it was definitely an interesting meal for sure.
Love the presentation. Will make it a point to go next time in CPH.

But how much do we *really* like seaweed? It’s become the trendiest item on tasting menus.
Do we enjoy the taste or is it more an intellectual exercise in texture and sustainability?
I love this restaurant.
I think about that smoked salmon course all the time – easily top 3 dishes I’ve ever had.
