I want to decorate cakes in this style but the buttercream icing recipes I’ve been using just haven’t worked well. A year ago I found one recipe that was perfect (used it for a different friends bday cake) but I can’t remember where I found it, I’m not even sure if it was a buttercream recipe 😭 I want to make my friend a bday cake next week and my experiments have not been working. Any recipe suggestions would be greatly appreciated ☺️

American buttercream can be a little soft to work with when it comes to piping onto cakes, personally I love to use Swiss meringue buttercream!
Good if you can post the recipe(s) you have used already.
Swiss meringue is great but can be a bit temperamental.
I’ve seen quite a few people use white chocolate ganache for this

Whenever I make cakes like these I use Swiss meringue buttercream; pipes like a dream, isn’t too sweet, and is incredibly smooth. It takes a bit more work than American buttercream but worth it imo
Ermine buttercream is a cooked frosting that’s very fluffy and pipes well! It tends to melt in the heat but keep that in mind!
Royal icing maybe? That’s what i learned with, but it is sweet XD
Try swiss or italian buttercream.
Oh man I haven’t even heard of Swiss meringue buttercream I’ll have to try this too, I’m going to try and make my daughter a cake in this exact style,

They icing they used back then. Royal Icing. I finally found out what it was called from this sub. My husband asks for it every year for his bday. So now I know what to order this year.

Ermine is great but my instant go to for quick stiff pipeable frosting for cakes like these is a stabilized custard frosting. 15 oz custard powder or jello pudding mix for every 1 pint of cream and then whip till thick. With a little color it looks nice and tastes really good. Not too sweet either! It also hold up incredibly well to heat from the starch found in pudding and custard mixes so it’s amazing for cakes in outdoor conditions on hot days.
If you want to really understand buttercream, I recommend Sugarologie. All her recipes are very well tested and she has videos explaining all her methodology very clearly. But if you watch her videos you’ll learn enough to be confident in choosing the right recipe for you.
