I recently ordered Parmesan that came right from Italy!!!!!!!! It was expensive but the difference in taste is so noticeable it’s a game changer!!!!!!

    That’s the basic principle of Italian cuisine: very few ingredients, minimal processing (like, not too many deep fried stuff), very low amount of condiments like sauces, but top quality ingredients to create an explosion of flavour

    Costco sells 24 month aged DOP (Italy) Parm reg for around $15/lb that’s incredibly good.

    The real Parmigiano Reggiano has the marked rind.

    If it’s labeled as parmigiano reggiano, even if it’s sold in the US, it is legit Italian parm

    Fundamental: knowing the maturation period. It doesn’t look like it’s written on the package but looking at the grain it looks like a 24 month. Not great not terrible.

    Why doesn’t it have a DOP seal? Is it because it was meant for domestic sale in Italy? I see it says PDO
