    It’s all about how you like your beef truly. If you like it medium this is perfect. I personally prefer it a little less done 😊

  4. You’re good. Sure it could be nit picked about edge to edge pink but I sure wouldn’t turn it away.

    Next time look up Alton Brown’s cream horseradish recipe. Use fresh. It’s solid.

    Did you make an au jus? Also as others have mentioned, I hope you either made or purchased some horseradish cream sauce.

    Looks great, the nice thing about big cuts like this is it has something for everyone, you like it more done take the end piece, you like it more rare you get the middle.

  16. It’s all about the flavor and juiciness. If the flavor is there and it isn’t dry, as a roast, it will be excellent. The end cut is very desirable for a reason.
