The recipe is very easy because this cake is made with **simple tea biscuits** (not shortbread, lighter store-bought biscuits made with low butter or oil) and a chocolate frosting made with **Mascarpone cheese, dark chocolate, whipping cream** and a bit of **powdered sugar**.
The biscuits become very soft if you let the cake set in refrigerator overnight. You can store it in refrigerator for many days, it will become even more delicious.
You can have a chilled slice directly from the fridge, so I think it’s perfect in this hot season.
It’s perfect for those who can’t eat eggs: just choose for eggless biscuits.
