Hello!
I am looking for a safe vegetable stew recipe – I was so excited to find one in a cookbook and then realized it was from the Canning Diva and that she is not to be trusted. I’ll attach a pic here as well to review. Thanks!

    The most questionable ingredient in there is garlic. Otherwise it seems fine. The NCHFP says vegetable soups are safe to pressure can as long as each of the ingredients have safe canning recommendations – and garlic does not.

    The recipe you posted is actually a great example of why Canning Diva recipes shouldn’t be trusted on their own. It looks fine except for one sketchy ingredient that many people wouldn’t realize shouldn’t be there because there are no verified safe ways to can it.
