Tonight's dinner, grilled wild caught salmon, grilled polenta circles and farmers market vegetables in a bean salad (similar to Cowboy or Redneck Caviar). Watermelon for dessert, not pictured.
It was one of my favorite dinners this summer. 😋

“Cavier” Recipe
1 can black eyed peas
1 can black beans
2 tomatoes, small dice
1/2 purple onion, small dice
1 Jalapeño, small dice
1/2 can black olives, small dice
1 handful chopped cilantro
1/2 bottle Simple Truth Organic Italian dressing
1/2 tsp. Garlic powder
1/2 tsp. Onion powder
1/4 tsp. Cumin
Refrigerate, let flavors “marry”. 😋
