1) Tuna and salmon tostada, with avocado, and a salsa of chili de arbol, sesame oil, soy sauce and other

2) salmon sashimi with yuzu, chili morita, and tapioca

3) akami (lean tuna) with sauteed shiitakes in butter with light soy sauce and a marcona almond tucked in the rice

4) shima aji (striped jack)

5) madai (red snapper) with umeboshi and shiso

6) kampachi (amberjack) with fresh wasabi and furikake

7) salmon with white miso and crushed sesame seeds

8) maguro chutoro with light soy and ossetra caviar

9) I forget what this was but it had confit jalapeño on top and it was stupid good

10-11) king crab salad with lemon aioli, hit with the hand broiler

12) anago (saltwater eel) hand roll

13) otoro (fatty tuna belly) with caramelized miso/yuzu glaze

14) bonus: ama ebi (shrimp) with fried head

15) Hokkaido scallop, with a “mole” of beet, goat cheese, pistachio, and chili morita. And assorted tempura.

16) dessert: tempura bread pudding with orange espuma and nori
