My lunch today is not a traditional Mediterranean dish, it’s Indian, but I think it still fits with the eating plan. We recently went on a cruise and they had an Indian night in the buffet and they prepared Dosa Masala with Sambar, and I knew I had to try it. I think I did okay for my first attempt. The dosa is made from Idli Rice, Poha (thick flat rice) a couple types of lentils, salt, and water. It’s puréed into a batter and then fermented overnight. The filling is a potato and lentil mixture and the sambar is a lentil and vegetable curry. I didn’t have time to make the chutney I had planned, so I used Greek yogurt and shredded cucumber to make a cheater raita.
