Made this AMAZING Sea Bass for my day off today!! Took only 25 minutes start to finish!!!

Potatoes:

-gold and purple fingerling potatoes, washed, halved, tossed with canola (high heat cooking), salt pepper and oregano, cooked in the air fryer spinning basket at 400° for 20 minutes.

-peach, chopped with basil (inspired by your posts!!)

-1 cup of micro greens and half of an avocado, with ginger dressing (store bought).

-sea bass: washed, dried, salt, pepper, lime zest, dredged in flour, and pan seared on medium high for 4 minutes on the first side (burned skin 😔, will do 3 minutes next time), and 2 on second. Topped with cilantro micro green pesto I made over the weekend (cup of cilantro microgreens, handful of raw almonds, 2 cloves of garlic, salt, pepper, and canola, blended)… and finished with fresh lime juice.

    Yum! I’m going to try this as soon as I can get my hands on some sea bass. Thanks for the tip on timing the sear.
