I used to be absolutely addicted to these amazing garlic kale rolls from a local bakery, but for years since I became a vegan, I haven't been able to enjoy them anymore.

Today the craving was really strong and I decided to say heck with it, I'm going to just try and make my own version of them at home! They came out absolutely amazing and perfect, and so I felt the need to share my joy with all of you!

My favorite part is that I just used prepared pizza dough from the deli at my local grocery store! I feel like I just got away with something 😂

Ingredients:
2 lbs fresh pre-made pizza dough (2 x 1 lb balls)
1 bunch fresh kale, de-stemmed
1/2 cup vegan butter (e.g., Miyoko's), softened
3 cloves elephant garlic, finely minced
1/2 tbsp mushroom seasoning
Shredded vegan parmesan cheese (e.g., Follow Your Heart)
2 pinches kosher salt

Instructions:
De-stem the kale and place the leaves in a large mixing bowl. Add 2 pinches of salt and massage the kale until it becomes pliable. Set aside.

Combine the minced garlic, vegan butter, and mushroom seasoning in a microwave-safe cup. Microwave for 10 seconds, stir well, and set aside.

Divide the pizza dough into 8 balls (4 oz each). Line a baking sheet with parchment paper and lightly oil it. Preheat the oven to 400°F.

Roll each dough ball into a rough oval, then into a tube. Roll the tube into a strip about 18 inches long and 1.5-2 inches wide, tapering at one end.

Brush the wide end of the dough strip with garlic butter, stopping 1-1.5 inches from the tapered end. Lay the kale leaves flat over the buttered area. Roll the dough tightly from the wide end, sealing with the unbuttered end. Place the rolls on the prepared baking sheet.

Flatten each roll gently with your hand. Brush the tops with garlic butter and sprinkle with vegan parmesan. Bake for 25 minutes.

Allow the rolls to cool slightly before serving.
