1. Fry up some chicken in your favourite seasoning / spices, and set aside
  2. In the same pan, soften pepper and red onion
  3. When nearly done, throw in some sliced courgette
  4. In a separate pan, add some oil, chickpeas, and again your favourite spices / seasoning, and a squirt of lemon juice
  5. Chuck in some diced tomatoes
  6. When softened and courgette is turning golden, pour this into your chickpea mix along with your chicken
  7. Add as much pesto as is to your taste
  8. While this all heats together, fry up some halloumi (I used halloumi that had basil infused!)
  9. Serve on whatever you like, I used salad leaves
