- Fry up some chicken in your favourite seasoning / spices, and set aside
- In the same pan, soften pepper and red onion
- When nearly done, throw in some sliced courgette
- In a separate pan, add some oil, chickpeas, and again your favourite spices / seasoning, and a squirt of lemon juice
- Chuck in some diced tomatoes
- When softened and courgette is turning golden, pour this into your chickpea mix along with your chicken
- Add as much pesto as is to your taste
- While this all heats together, fry up some halloumi (I used halloumi that had basil infused!)
- Serve on whatever you like, I used salad leaves
