* 1 cup raw cashews * 1 small sweet onion * 1 tablespoon roasted garlic * 1 cup nondairy milk * 1/2 teaspoon vegetable bullion * Salt & pepper to taste * Parsley to taste * 1 lbs pasta of choice * 3 cups broccoli ( I used frozen)
Directions
1. Boil cashews and onions for 5 minutes. Drain and transfer to your blender. Add garlic, nondairy milk, bullion, salt and pepper. Blend until smooth. 2. Cook pasta according to directions on package. Place frozen broccoli in colander and drain pasta over it. That will be enough to warm the broccoli. 4. Place everything in a bowl large enough to mix adding parsley to taste. Enjoy.
