I decided to make an entire birthday cake at 12:30am when I got home from work cause I felt motivated. I hated myself at 9:30am when I was cleaning the kitchen after it looked like a tornado hit it lol

I have baked successfully at night before, but I have learned over time to have a rule. Time of day notwithstanding, it’s never a good idea to bake when I’m tired. It will not go well. If I’m feeling fresh enough to get through the whole thing (including cooling and storing) then go for it.

I literally made an apple cake at 2:00 AM last Saturday when I couldn’t sleep. It was still cooling when I started feeling drowsy so I threw a tea towel over it and went to bed. No regrets.

It’s the best until I’m cleaning and starting to run out of steam but there is still 30 mins left on my bake. And of course I have to wait for it to cool so I can “test” it and make sure it’s good. So now I’m beyond tired and have a stomach ache.
