    Any secret to that crust? Pat it dry and brined and dried in fridge? And bring pan to boiling hot? And fry 1 min each side? What method did you use?

    EXACTLY how I like my steak. Good heavy crust, no grey band, cooked to my desired temp. Nicely done.
