I frequently make tomato soup but using passata, I’m to give this one a try though whilst tomatoes are in season and a good price – it looks delicious. Like you I love a cheesy carbohydrate with it, and usually make cheese scones to go with it.
Hi Mandi, just had to tell you how I like to have my Welsh Rarebit, which I was introduced to at the River View tea room in the village of Burnsall in the Yorkshire Dales. There it was renamed as a Yorkshire Rarebit. Basically it’s a normal rarebit on speed. To make it, you make some toast as usual but give a good shake of Worcestershire sauce or Henderson’s Relish, next add a slice of roasted Yorkshire ham, fairly thickly sliced or alternatively use a layer of thick sliced dry cured bacon, then make a normal flour and butter roux but add another splash of WS or Hendos before adding some of your chosen grated cheese, preferably a strong flavoured cheese, I prefer Wensleydale or a Scottish cheddar. Blend most of the cheese into the roux, but reserve a handful or two to decorate the finished dish. Then add the yolk of an egg and beat it into your cheese sauce and keep it beaten until you can pile it on the toast. Put your toast under your grill but reduce the heat a little so that it doesn’t burn, then take another egg yolk per toast and put it on top, scatter the remaining cheese on top of the yolks and serve immediately on a plate with a small salad to dress the dish, I suggest either a bistro salad or little gem sliced tomato and cucumber and red pepper strips.
Welsh rarebit is a huge favourite with us-its so easy but so much nicer than ordinary cheese on toast. I sometimes use cider instead of beer-its a bit sweeter and goes well with salty strong cheddar.
Been looking out for a good tomato soup recipe for ages, and I get one for rarebit too 😂 My wee granny used to always throw the green bits in too, I love the smell of them on the vine, I always buy them over the salad tomatos because of her. Any soup that contains beef she always used shin of beef for the extra flavour the bones would give. Same with chicken, use the carcass etc. Older people know best I guess.
Beddy lads Lass you forgot to add worcestershire sauce, Tabasco and a pinch of celery salt to your rarebit pet 😢😢😢. Beddy lad loves a little spice me hinney 😂😂😂🎉. I hope you used brun ale in your rarebit too pet? I like to fry the bread first and butter with English mustard then add the rarebit topping and add a teaspoon of horseradish cream to my tomato soup instead of cream Beddy lads Lass. Nobody likes sloppy seconds me hinney 😂😂😂😂🎉

Mand if you just flattened the garlic a tad the skin comes off so easy .and I roast garlic whole if it is going in a blender it does not over cook

Both soup and rarebit look really tasty. I’ve never cooked either of them but when our greenhouse tomatoes are ready I’ll try it out 😋😊
