  1. Today’s lunch was a 3 parter of some of my favorites.  

    The main dish consisted of Spanish red rice with a heaping of oven roasted tomatoes, peppers, and onions, topped with shrimp spiced with sumac and paprika. I wanted to have beans to go with the rice, but alas, the beans have to soak for 12 hours before being cooked and I only hand 2 hours before I had to leave for work.

    The soup is the classic red lentil soup recipe as published by the Mediterranean Dish with the modification of using the juices from a chicken thigh recipe I had made instead of stock.

    The salad is a simple go-to consisting of radishes, radish greens, apples, and pepitas with a balsamic vinaigrette.
