  4. Maybe I’m being pedantic but maybe sharpen the knife a bit more? I might be crazy but the slices always taste better when it’s just one smooth cut per slice. Also, you cooked it perfectly. Cheers

    It’s good but a little more practice on the knife technique, you don’t want to cut it a lot like a saw blade but the fewer the better. And cut with the grain too, it’ll all taste better as the texture will be much better

    You don’t need a new knife — just get a sharpening stone and learn how to sharpen it. It will keep decent knives in good shape forever

  24. Low heat high smoke when you put the steak on. I like to have a few coals and to drop a new set of charcoal on top. Drop the steak on after the smoke starts billowing. Flip after 2 min. Cook for a lot longer than gas or cast iron. Flip as many times as needed. Pull off at 125-130 center temp.

  27. Looks great! As others have said, sharpen that knife or trade up. When you do, don’t drag the knife across the cutting board sideways, that is a very good way to get your knife into the condition it appears to be in.

  28. Did you steal that knife from my In-laws drawer? It looks a little different, but the lack of sharpness is SPOT on.

    Steak looks fantastic though, good job OP.
