Costco USDA Prime ribeye. Reverse seared. Indirect heat with Weber Kettle 26”, grill temp ranging between 230-280°. Pulled at 120° internal. Rest for 10’ while prepping for the vortex. I think vortex temp is above 650° (my thermometer maxed out, only said “high”). Then 30s per side plus fat cap.

    Medium, but that’s often a better temperature range for ribeye because of delicious fat rendering that doesn’t fully happen at medium-rare

    I personally think this is the perfect level of doneness for when making steak for a large group of people. And if you have someone that still says it’s undercooked, you ask them politely but firmly to leave.😂

    I agree with those saying med-well, but it doesn’t look a bit dry. The colors on the top & inside look good ( pardon my amateur terms or lack of proper ones yet. )
    While I normally prefer more red/rare inside, I am learning that different cuts like this taste better with a bit more time for the fat to render, and the flavor and texture will be more enjoyable. So all things considered… I’d happily Om Nom NOM every bit and probably want 0 sauce!
