* 1 cup red lentils, rinsed * 1 can coconut milk * 1 onion, chopped * 2 cloves garlic, minced * 1 tbsp ginger, grated * 2 tbsp curry powder * 1 cup vegetable broth * 1 tbsp olive oil * Salt and pepper to taste * Fresh cilantro for garnish
Instructions:
1. Heat olive oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant. 2. Add curry powder, cook for 1-2 minutes. 3. Stir in lentils, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender. 4. Season with salt and pepper. 5. Serve over rice or naan (or both just like in the pic!) , garnished with fresh cilantro.
