So I'm in Denver, Colorado and tried out this restaurant called La Loma. They have some amazing salsa but it's a far drive for me to keep grabbing more. Does anyone happen to know their recipe?

Hard to tell, if I had to guess it seems like they blackened what ever peppers they used. It’s probably arbol chili red salsa. How spicy is it?
Try softening up some dried arbol chilis in some simmering water for 10 minutes. Let them cool, and then pat dry them. Give em a light coating of oil and then broil until nice and blackened. I’d probably guess doing the same process with a couple guajillo peppers along with the arbols would be good too. The guajillos aren’t very spicy but add a ton of good chili flavor.
From there it’s probably about just finding the right balance of tomato, onion, cilantro, salt, and pepper. Does it taste like it has lime in it? Some places add lime to red salsa while others don’t.
A pretty generic salsa roja de arbol recipe I’ve used would be:
6 chili de arbol 6 guajillo chili 4 roma tomatoes 1/2 onion 3-5 cloves of garlic depending on size 1 cup of cilantro Salt, pepper, lime to taste

It looks like probably canned tomatoes(whole peeled), char-grilled onion and jalapeños, probably some garlic and then fresh cilantro. Maybe lime juice. Literally impossible to tell the ratios without tasting it. Visually it’s pretty clear to tell no signs of dried chiles, dried spices(oregano), etc.
